Breakfast Burrito

Ingredients:

  • 4 large flour tortillas
  • 6 large eggs
  • ¼ cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter or oil
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
  • 4 slices of cooked bacon (or substitute with sausage, ham, or a meat alternative)
  • 1 cup cooked hash browns or diced, roasted potatoes
  • ½ cup salsa or diced tomatoes
  • 1 avocado, sliced (optional)
  • ¼ cup chopped cilantro (optional)
  • Hot sauce (optional)

Instructions:

  1. Cook the potatoes: If using hash browns, cook them until golden and crispy. If using diced potatoes, roast them with a little oil, salt, and pepper until tender.

  2. Prepare the bacon: Cook the bacon in a skillet until crispy. Remove and set aside on paper towels to drain. You can crumble the bacon after it cools. If using sausage, cook it in the same skillet, breaking it up into small pieces until browned.

  3. Scramble the eggs: In a bowl, whisk the eggs with the milk, salt, and pepper. Heat the butter or oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and just set. Remove from heat.

  4. Warm the tortillas: You can warm tortillas in a dry skillet for about 30 seconds on each side or wrap them in a damp paper towel and microwave them for about 20-30 seconds.

  5. Assemble the burritos:

    • Lay each tortilla flat.
    • Add a portion of scrambled eggs, cooked potatoes, bacon (or sausage), and cheese to the center.
    • Add salsa, avocado slices, cilantro, and hot sauce if desired.
    • Fold the sides in, then roll the burrito tightly from one end to the other.
  6. Optional: For an extra crispy burrito, heat it in a skillet over medium heat for about 2-3 minutes on each side until golden and crispy.

  7. Serve hot with extra salsa, sour cream, or guacamole on the side.
