Ingredients:

  • 1 French baguette (sliced into ½-inch thick pieces)
  • 4 ripe tomatoes (diced)
  • 2-3 cloves garlic (minced)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and pepper to taste
  • Fresh mozzarella or Parmesan cheese (optional)
  • 1-2 tablespoons butter (optional, for toasting)

Instructions:

  1. Prepare the Tomato Mixture:

    • In a bowl, mix the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar (if using), salt, and pepper.
    • Let the mixture sit for about 15-20 minutes to allow the flavors to blend.
  2. Toast the Bread:

    • Preheat your oven to 400°F (200°C).
    • Lightly brush each slice of baguette with olive oil (or butter if you prefer a richer flavor).
    • Place the slices on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown and crispy.

    Alternatively, you can toast the bread in a pan on the stove.

  3. Assemble the Bruschetta:

    • Once the bread is toasted, you can optionally rub each slice with a clove of garlic for extra flavor.
    • Spoon the tomato mixture onto the toasted bread slices.
  4. Add Cheese (Optional):

    • For a cheesy twist, add slices of fresh mozzarella or a sprinkle of grated Parmesan on top.
  5. Serve:

    • Serve the bruschetta immediately, garnished with extra basil if desired.
