- 2 eggs (lightly beaten)
- 1 small onion, finely chopped
- 1 carrot, diced
- ½ cup peas (fresh or frozen)
- 2-3 green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil (optional)
- Salt and pepper to taste
Optional Add-ins:- ½ cup cooked chicken, shrimp, or pork (chopped)
- 1 teaspoon minced garlic
- ½ teaspoon grated ginger
Instructions:1. Prep the Ingredients:- Make sure your rice is cold (preferably leftover rice) as it helps keep the grains separate.
- Prep all your vegetables, meat, and seasonings before you start cooking.
2. Cook the Eggs:- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the beaten eggs and cook until scrambled. Remove the eggs from the pan and set aside.
3. Stir-fry the Vegetables:- In the same pan, add the remaining oil.
- Add the chopped onions and cook for 1-2 minutes until softened.
- Add the carrots, peas, and any other vegetables or meats you are using. Stir-fry for 3-4 minutes until they are cooked but still crisp.
4. Add the Rice:- Add the cold rice to the pan and break up any clumps using the back of a spoon. Stir-fry the rice for 2-3 minutes to heat through.
5. Add Seasoning:- Stir in the soy sauce, oyster sauce (if using), and sesame oil. Mix everything well.
- Add the scrambled eggs back into the pan and stir them into the rice.
- Season with salt and pepper to taste.
6. Finish and Serve:- Add the chopped green onions and stir for another 1-2 minutes.
- Serve hot, garnished with more green onions if desired.
