 Chainees Rice

Ingredients:

  • 3 cups cooked and cooled rice (preferably a day old)
  • 2 tablespoons vegetable oil
  • 2 eggs (lightly beaten)
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • ½ cup peas (fresh or frozen)
  • 2-3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste

Optional Add-ins:

  • ½ cup cooked chicken, shrimp, or pork (chopped)
  • 1 teaspoon minced garlic
  • ½ teaspoon grated ginger

Instructions:

1. Prep the Ingredients:

  • Make sure your rice is cold (preferably leftover rice) as it helps keep the grains separate.
  • Prep all your vegetables, meat, and seasonings before you start cooking.

2. Cook the Eggs:

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the beaten eggs and cook until scrambled. Remove the eggs from the pan and set aside.

3. Stir-fry the Vegetables:

  1. In the same pan, add the remaining oil.
  2. Add the chopped onions and cook for 1-2 minutes until softened.
  3. Add the carrots, peas, and any other vegetables or meats you are using. Stir-fry for 3-4 minutes until they are cooked but still crisp.

4. Add the Rice:

  1. Add the cold rice to the pan and break up any clumps using the back of a spoon. Stir-fry the rice for 2-3 minutes to heat through.

5. Add Seasoning:

  1. Stir in the soy sauce, oyster sauce (if using), and sesame oil. Mix everything well.
  2. Add the scrambled eggs back into the pan and stir them into the rice.
  3. Season with salt and pepper to taste.

6. Finish and Serve:

  1. Add the chopped green onions and stir for another 1-2 minutes.
  2. Serve hot, garnished with more green onions if desired.
