French Toast with Berries

     

Ingredients:

  • For the French Toast:

    • 4 slices of bread (brioche, challah, or any soft bread)
    • 2 large eggs
    • 1/2 cup milk (whole or any milk alternative)
    • 1 tsp vanilla extract
    • 1/2 tsp ground cinnamon (optional)
    • 1 tbsp sugar (optional)
    • Pinch of salt
    • 1 tbsp butter (for cooking)
  • For the Topping:

    • 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
    • 2 tbsp maple syrup or honey
    • Powdered sugar (for dusting)
    • Fresh mint leaves (optional, for garnish)

Instructions:

  1. Prepare the French Toast Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, sugar, and a pinch of salt until well combined.

  2. Soak the Bread: Dip each slice of bread into the egg mixture, making sure to coat both sides evenly. Let the bread soak for about 20-30 seconds on each side.

  3. Cook the French Toast: Heat a non-stick skillet or griddle over medium heat and add the butter. Once melted, place the soaked bread slices onto the skillet. Cook for about 2-3 minutes per side, or until golden brown and crispy on the edges.

  4. Prepare the Berries: While the toast is cooking, wash and prepare your berries. If the berries are large (like strawberries), slice them into bite-sized pieces.

  5. Assemble: Once the French toast is ready, place it on a plate. Top with the fresh mixed berries, drizzle with maple syrup or honey, and dust with powdered sugar.

  6. Serve: Optionally, garnish with fresh mint leaves for a burst of color and freshness.
