Instructions:1. Blend the Batter:- In a blender, combine the bananas, eggs, oats, milk, vanilla extract, baking powder, cinnamon, and salt.
- Blend until the mixture is smooth and resembles a pancake batter. Let it sit for a couple of minutes to thicken slightly.
2. Cook the Pancakes:- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake.
- Cook for about 2-3 minutes on one side, until bubbles form on the surface and the edges are set.
- Flip and cook for another 1-2 minutes until golden brown and cooked through.
3. Serve:- Stack the pancakes on a plate and top with your favorite toppings like fresh fruit, maple syrup, or nut butter.
Tips:- For extra texture, you can fold in chocolate chips, blueberries, or chopped nuts into the batter before cooking.
- If you want the pancakes a little fluffier, you can add an extra 1/2 tsp of baking powder.
