 Banana Oatmeal Pancakes

Ingredients:

  • 2 ripe bananas (mashed)
  • 2 large eggs
  • 1 cup rolled oats
  • 1/2 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon (optional)
  • Pinch of salt
  • Cooking spray or butter (for cooking)

Optional Toppings:

  • Fresh fruit (bananas, berries, etc.)
  • Maple syrup or honey
  • Nut butter
  • Chopped nuts

Instructions:

1. Blend the Batter:

  1. In a blender, combine the bananas, eggs, oats, milk, vanilla extract, baking powder, cinnamon, and salt.
  2. Blend until the mixture is smooth and resembles a pancake batter. Let it sit for a couple of minutes to thicken slightly.

2. Cook the Pancakes:

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  2. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  3. Cook for about 2-3 minutes on one side, until bubbles form on the surface and the edges are set.
  4. Flip and cook for another 1-2 minutes until golden brown and cooked through.

3. Serve:

  1. Stack the pancakes on a plate and top with your favorite toppings like fresh fruit, maple syrup, or nut butter.

Tips:

  • For extra texture, you can fold in chocolate chips, blueberries, or chopped nuts into the batter before cooking.
  • If you want the pancakes a little fluffier, you can add an extra 1/2 tsp of baking powder.
