Ingredients:

  • 2 large sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp cornstarch (for extra crispiness)

  • ½ tsp ground black pepper
  • ½ tsp salt
  • 1 tsp dried herbs (optional, like rosemary, thyme, or oregano)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the sweet potatoes:

    • Peel the sweet potatoes (optional, you can leave the skin on if you prefer) and cut them into ¼-inch thick sticks. Try to keep them as uniform in size as possible for even cooking.
  3. Coat the fries:

    • In a large bowl, toss the sweet potato fries with cornstarch to help them crisp up.
    • Drizzle the olive oil over the fries and toss to coat.
    • Sprinkle with paprika, garlic powder, black pepper, salt, and any herbs you are using. Toss again to ensure they’re evenly coated.
