Ingredients

  • 1 lb (450g) beef sirloin or tenderloin, thinly sliced into strips
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth (or stock)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice (for serving)

Instructions

  1. Prepare the Beef:

    • Season the beef strips with salt and pepper.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Sear the beef in batches for 1-2 minutes on each side until browned but not fully cooked. Remove and set aside.
  2. Cook the Onions and Mushrooms:

    • In the same skillet, add another tablespoon of olive oil.
    • Add the chopped onions and cook for 3-4 minutes until softened.
    • Stir in the minced garlic and cook for another 30 seconds.
    • Add the sliced mushrooms and cook for 5-6 minutes until browned and softened.
  3. Make the Sauce:

    • Sprinkle the flour over the onions and mushrooms, stirring to combine. Cook for about 1 minute.
    • Gradually pour in the beef broth, stirring constantly to avoid lumps.
    • Add the Dijon mustard and Worcestershire sauce, and bring to a simmer.
    • Reduce the heat to low and let the sauce thicken for about 5 minutes.
  4. Combine with Beef:

    • Stir in the sour cream until the sauce is smooth and creamy.
    • Add the seared beef back into the skillet, simmering for another 3-4 minutes until the beef is cooked through.
    • Taste and adjust seasoning with salt and pepper if needed.
  5. Serve:

    • Serve the Beef Stroganoff over cooked egg noodles or rice.
    • Garnish with fresh parsley.
