Ingredients:

For the Salad:

  • 4 cups ripe tomatoes, cut into wedges or large chunks
  • 1 cucumber, sliced into half-moons
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, sliced (optional)
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, cut into cubes or crumbled
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice (optional for extra zing)
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the vegetables: In a large salad bowl, combine the tomatoes, cucumber, red onion, and bell pepper (if using). Scatter the Kalamata olives on top.

  2. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice (if using), garlic, salt, and pepper.

  3. Toss the salad: Pour the dressing over the salad and toss gently to combine, making sure the vegetables are evenly coated.

  4. Add feta and oregano: Scatter the feta cheese over the top and sprinkle with dried oregano.

  5. Serve: Enjoy the salad as is or with a side of warm pita bread. You can also serve it alongside grilled chicken, lamb, or seafood for a complete meal.
